Mini Maple-Chocolate Chip Pancake Muffins

Sometimes, I just need to bake. I'm not much of a baker, I would much rather cook a meal than bake most days. I think it's because I have more of a savory tooth than a sweet tooth. Baked goods just don't really do it for me. But tonight, I was in the mood to bake something seasonal.

Soo, I turned to my little book that I bought last year:


It was a little hard to choose what to make out of this book. It has 74 recipes, all seasonal. I decided to make something I already had most of the ingredients for. I hate going to the store to spend $30 on ingredients just to make one thing. I needed buttermilk, so I searched substitutions and found out this handy little nugget.

These actually taste just like pancakes. I love mini food, because it's just enough to satisfy you so that you don't mind when your husband eats the rest.



Mini Maple-Chocolate Chip Pancake Muffins
(recipe from Bakerella)

Ingredients:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2/3 cup buttermilk (don't buy it, make it here!)
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup mini chocolate chips
  • Preheat oven to 350 degrees.
  • Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.
  • In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.
  • Add wet ingredients to dry ingredients and stir with a spoon until combined.
  • Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.
  • Divide evenly among muffin cups. 
  • Bake for 12 minutes or until edges are light brown and toothpick inserted in center comes out clean.
Makes 24 mini pancake muffins.
Let cool slightly and remove from the pan. You may need to use a toothpick around the edges to separate the pancake muffins from the pan.
Serve immediately with warmed butter if you like or even just with maple syrup.

You could make these for breakfast or to eat while watching Jersey Shore. Your call! :-P
