Double Chocolate Protein Muffins


 After making a few different types of protein baked goods, I threw together these double chocolate protein muffins. I love stuff like this because they are easy to take on the go and eat for breakfast. I really liked how they turned out! They are yummy, clean and filling!
Here's the recipe:

Double Chocolate Protein Muffins
  • 1.5 cups oat flour (rolled oats ground in blender or food processor)
  • 3 scoops vanilla or chocolate protein powder
  • 1/2 cup stevia or splenda 
  • 1 cup Almond Breeze Vanilla Unsweetened
  • 1 snack pack unsweetened applesauce
  • 2 egg whites
  • 3 tbsp unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup dark or semi-sweet chocolate chips
Instructions
  1. Pre-heat oven to 350.
  2. Spray muffin tin with cooking spray.
  3. Mix ingredients with a whisk until smooth. 
  4. Spoon mixture into 12 muffin cups.
  5. Bake for 25 minutes.

  1. These sound so good! Can you buy oat flour? or do you have to make it yourself in the blender/ food processor? (I'm lazy!)

  2. Honestly you probably can buy it somewhere but I've never been able to find it! I just use a magic bullet it's super easy!

    I know! PINK is my favorite color.. but... this color blue is a fabulous color isn't it! Kinda aqua/blue. I am thinking of painting a wall in in the kitchen this color blue.

    btw, bird nest (www.geocities.jp/hongkong_bird_nest/index_e.htm) is made up of about 58% soluable proteins...the highest amoung all food and even synetic protein powders

    it greatly increase tissue regeneration
